Boneless Leg of Lamb Roasting Guide


  1. Season roast the night before if desired.
  2. Place leg of lamb in roasting pan.
  3. Roast uncovered at 325 degrees F.
  4. Rare: 30-35 minutes per pound (140 degrees F)
  5. Medium: 40-45 minutes per pound (160 degrees F)
  6. Test temperature with meat thermometer.
  7. Let roast stand 10 minutes before carving.
